Maple Nut Fudge
Maple Nut Fudge (Polly’s)
Ingredients
2 cups sugar
1 Tablespoon butter
1 cup amber rich maple syrup
1 cup heavy cream
Nuts (Walnuts are traditional but peanuts work as well)
Bring syrup to near boil then reduce heat. Add sugar, butter & cream on low heat for about 30 minutes, stirring, until 236 degrees (do not go past 236).
Remove from heat, let cool, then beat until thick and creamy. Mix in nuts and pour into buttered pan.
